WHY DABOB BAY
Dabob Bay is one of the most pristine, best preserved saltwater bays on Puget Sound, due in large part to the steep stands of old growth Douglas fir that still run down to its shores, filtering the fresh water that runs into the saltchuck. The reclaimed fir we use for this table is from an 1890s urban lodge, which, given logging methods of the time, almost certainly means the trees were harvested from the same wild Puget Sound coastal forest. In naming the table after this rare place where the old forest still exists and is able to do its work - helping maintain conditions for some of the planet's best oysters, for example - we hope to inspire gatherings with similar qualities - depth, breadth, clarity and good health
